A couple of years ago, I stumbled upon a recipe for "melt in your mouth" pumpkin cookies. Ever since then, I've never looked back. These cookies are honestly the BEST, and I'm sure your friends and family will love you forever if you make them!

So, if you're looking for a unique pumpkin dessert this Thanksgiving, look no further than Pumpkin Cookie a la mode. This dessert consists of pumpkin cookies served with vanilla ice cream, a dusting of cinnamon, and an optional splash of Kahlua for those who wish to make it boozy. It's a refreshing and delicious way to end your Thanksgiving feast.

Pumpkin Cookie a la Mode Recipe Here's what you'll need:

  • 2 scoops of vanilla ice cream

  • A dusting of cinnamon

  • Pumpkin Cookies (recipe to be posted on the website)

  • 1/4 oz kahlua (optional)

***Served in Martini glasses (because martini glasses double as dessert dishes) Method: Here's how you can prepare this scrumptious dessert:

  1. Scoop out ice cream into your martini glasses.

  2. Dust your cinnamon over your ice cream.

  3. Optional: Pour your kahlua on top if you wish to make it boozy.

  4. Top with 1-2 pumpkin cookies.

And there you have it! A delightful dessert that's best enjoyed after you're stuffed with turkey but still want something sweet!

Pumpkin Cookies Recipe: Ingredients for cookies:

  • 2 cups butter, softened

  • 2 cups granulated sugar

  • 2 teaspoons baking powder

  • 2 teaspoons baking soda

  • 1 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • 2 eggs

  • 2 teaspoons vanilla

  • 15-ounce can pumpkin

  • 4 cups all-purpose flour

Ingredients for icing:

  • 1/2 cup butter

  • 1/2 cup packed brown sugar

  • 1/4 cup milk

  • 1 teaspoon vanilla

  • 3 - 4 cups powdered sugar

Method:

Cookie dough: Preheat the oven to 350 F. In a mixing bowl, add your butter and beat for 30 seconds using an electric mixer. Next add in granulated sugar and beat on medium speed until combined. Add in your baking powder, baking soda, salt, the 1 teaspoon cinnamon, and the nutmeg. Once combined, beat in the eggs and 2 teaspoons of vanilla until combined. Next add in your pumpkin and once that is combined, start adding in your flour. Add in your flour 1 cup at a time until all have been added and mixed. You may need to mix with a spon by the last coup of flour.


Time to bake the cookies! Add the dough to a parchment paper lined baking sheet. I like to use a melon baller (the larger side) to spoon out the dough (about a large teaspoon amount). Make sure to keep space between the cookies as they spread out a little when baking. Bake for 10 to 12 minutes until golden. Transfer to a cooling or wire rack after they are done.


Icing: Once the cookies are completely cooled, its time to make the icing. In a saucepan, over low heat, mix together the 1/2 cup butter with the brown sugar. Keep the heat low and stir until butter is fully melted and the sugar and butter are fully combined. Transfer into a mixing bowl and add in your vanilla and milk. Stir until combined and start adding your powered sugar. Add in your 3 -4 cups until icing forms a thicker consistency. Using a butter knife, spread icing over each cookie.
