Spinach Artichoke Dip

Thanksgiving is a time for family, friends, and of course, food! While we all look forward to the main course, the appetizers also play a crucial role in setting the mood for the feast. They can whet your appetite and keep your guests entertained as the turkey roasts. One of the best things that you can pair your cocktails with, is a good appetizer! A hearty dip, perhaps! My tradition every Thanksgiving is to do an artichoke dip of some sort and my favorite is spinach artichoke dip. In the spirit of Thanksgiving, I thought I'd share my little tip of using marinated artichokes instead of artichokes in water when making this dip to add some extra flavor! The Recipe Let's get to dipping! Here's the recipe for the Spinach Artichoke Dip:
16 ounces cream cheese (softened)
1/3 cup mayo
3/4 cup plain greek yogurt
1 cup shredded mozzarella cheese
1 cup grated or shredded parmesan cheese
1 tablespoon garlic powder
12 ounces chopped frozen spinach. (It should be completely thawed and drained very well. I squeeze mine to get rid of any extra moisture.)
12 oz jar of MARINATED artichoke hearts. Drained (I like to chop them up in a food processor. It chops them much more consistently than I can do by hand.)
1/2 teaspoon salt and pepper
Tortilla chips to serve (Always go for the scoops)
Method: Preheat the oven to 350. Add your cream cheese, greek yogurt, moz cheese, parm cheese, garlic, spinach, artichokes, salt and pepper to a bowl and stir very well! Spread your cheesy goodness into a baking dish (9x13) and bake for 25 mins. Now it's time to serve! Best enjoyed with a Thanksgiving cocktail while you wait for the turkey to be done!
