Today, we're giving the classic Gin Rickey a holiday spin that's bound to get you in the holiday spirit. Introducing the Gin St. Nicky 🎅, a refreshing cocktail inspired by the Empress Elderflower Rose Gin. Let's get mixing!
The Empress Elderflower Rose Gin
I recently managed to lay my hands on the Empress Elderflower Rose Gin, and I couldn't be more excited. The gin boasts a beautiful color that's perfectly suited for the holiday season. Inspired by the rose gin, I decided to create another gin cocktail that's perfect for welcoming St. Nicholas.
Gin St. Nicky 🎅: A Holiday Cocktail For those unfamiliar with it, the Gin Rickey is a simple cocktail consisting of lime juice, gin, and soda water. For our holiday take on this classic, I've added ginger simple syrup and pomegranate seeds to make it a perfect festive drink. Ingredients: - 2 oz Empress Elderflower Rose Gin (@empress1908gin) - 3/4 oz lime juice - 1/2 oz ginger simple syrup (recipe below) - 1 spoonful of pomegranate seeds - Lime Seltzer water - 1 sprig of Rosemary Directions: Start by filling a highball glass with ice. Add in your lime juice and ginger simple syrup. Top with soda water, leaving room at the top, and give it a good stir. Next, add in your pomegranate seeds and stir again. Pour your 2 oz gin (served in a fun plastic ornament hung in the tree for a festive twist) into your highball glass and stir before sipping. Garnish with a sprig of rosemary and enjoy while wrapping presents in your private Santa workshop.

Ginger Simple Syrup
This ginger-infused simple syrup adds a spicy twist to the cocktail. Here's how to make it:
Ingredients:
- 1/2 Cup Hot water (bring it to a boil for best results)
- 1/2 Cup Granulated Sugar
- 2 tablespoons slices of ginger
- 1 teaspoon of microplaned ginger
Directions:
In a bowl, stir together the hot water and sugar until the sugar fully dissolves. Add in your ginger slices and microplaned ginger, give it a good stir, and let it sit for 30 minutes to overnight in the fridge, covered. Once it's ready, strain the mixture and transfer it into a mason jar or syrup dispenser using a cheesecloth and strainer. Don't forget to label it, so you know that this is the magic elixir that gives your Gin St. Nicky its unique flavor! This simple syrup will last in the fridge, well-sealed, for about 1-2 weeks.
