Haunted Lychee Martini

Don't take your eyes off this martini! I recently discovered lychees when it comes to cocktails. I've always been partial to a dirty vodka martini and have never tried a Lychee martini. I've been intrigued by Lychee martinis because let's be honest, they look like eyeballs...SO in the spirit of Spooky season, I'll take one for the team and try a lychee martini. Well turns out, lychees are DELICIOUS and pairing lychee syrup with vodka is heavenly!
Well since lychees look a little bit (okay a lot a bit) like eyeball sockets, this got my halloween brain spinning. What if we add a blueberry to the middle of a lychee?! Lychee plus a blueberry makes a perfect spooky eyeball! What a festive garnish! It's only right now that we add a little bit of the blueberry flavoring to the classic lychee cocktail!
Let's make a Halloween inspired Lychee Martini!
Haunted Blueberry Lychee Martini
- 2 oz Vodka (I used Grey Goose of course)
- 1 oz Lychee juice/syrup from the can of lychees
- 1/2 oz fresh squeeze lemon juice
- 3/4 ounce blueberry simple syrup
- 1/2 dry vermouth
- 2 lychee fruits from a can
- 2 blueberries
Method:
Start by putting your martini glass or coupe glass in the freezer to get it nice and chilled by the time you're ready for it. Next add your vodka, lychee juice, lemon juice, blueberry simple syrup and dry vermouth into a cocktail shaker. Add ice to your shaker and shake vigorously. Grab your chilled martini or coupe glass from the freezer and pour out your mixture from the cocktail shaker into your chilled glass. For your garnish, take 2 lychees and place a blueberry in the middle of each lychee, grab a cocktail skewer and place the lychees onto the skewer. Place your skewer in your glass and get ready to serve this EYE catching cocktail! Best enjoyed with friends because you're gonna want to show these martinis off!
Blueberry Simple Syrup:
- 1/2 cup water
- 1/2 cup sugar
- 1/4 cup blue berries (I used frozen)
Bring water to a boil, add your sugar, turn off your heat and stir until sugar is fully dissolved. Add your blueberries and let sit for a couple hours. I let mine sit overnight in the fridge, I really wanted a strong flavor. Strain your mixture into a mason jar and label. This should last 3-4 weeks in the fridge.
