Hi Barbie Cocktail!

Been thinking pink all summer! Here's a little pink drink for all your Barbie festivities!

"Hi" Barbie Mojito- tini!

- handful of mint (approx 10 leaves)

- 2 oz rum

- 1/2 oz agave syrup

- 1/4 liquid measuring cup of frozen dragon fruit

- 3 oz soda water (lime flavor is best)

- 3/4 oz lime juice

- edible glitter

Muddle your rum, mint leaves and lime juice together. Give them a real good muddle. Strain mixture into a separate glass. Add in your agave syrup, dragon fruit and soda water. Blend together in an electric blender and then strain out into a frosted martini or coupe glass. Garnish with fresh mint. Give it a few good sprays with edible glitter (because what is Barbie without some glitter). Best enjoyed before your Barbie viewing party!
