Spring is in the air, and Easter is just around the corner. What better way to celebrate than with a refreshing cocktail that tastes like a vacation in a glass? Introducing the Pineapple Carrot Paloma, a delightful blend of tropical and earthy flavors that will elevate your Easter brunch.

Ingredients:

  • 1 1/2 oz Tequila: The base spirit that adds a smooth kick.

  • 1 1/2 oz Grapefruit Juice: For a splash of citrusy freshness.

  • 1/2 oz Lime Juice: To enhance the tangy profile.

  • 3/4 oz Carrot Juice: Adds a subtle earthiness.

  • 1/2 oz Ginger Simple Syrup: For a hint of spice.

  • 1 can of Pineapple Spindrift: Complements with a fizzy tropical touch.

  • Pink Salt for rim: A touch of sophistication.

  • Pineapple Leaves for garnish: Adds a festive touch, resembling bunny ears.

  • Edible Dehydrated Flower garnish: For a vibrant finish.

Directions:

  1. Shake It Up: In a cocktail shaker, combine tequila, grapefruit juice, lime juice, carrot juice, and ginger simple syrup. Add ice and give it a good shake.

  2. Prepare the Glass: Take a medium-sized glass and rim it with pink salt by tracing the rim with a lime wedge.

  3. Mix & Serve: Fill the glass with ice, strain your cocktail into the glass, and top it off with a can of Pineapple Spindrift. Give it a gentle stir.

  4. Garnish: Add pineapple leaves and an edible dehydrated flower for a festive and elegant presentation.


Ginger Simple Syrup:

  • 1/2 cup Water

  • 1/2 cup Granulated Sugar

  • 2 tablespoons grated fresh ginger

Combine 1/2 cup water, 1/2 cup granulated sugar and grated ginger in a saucepan over medium heat. Stir until fully combined and the sugar is fully dissolved. Remove from the heat. Let sit for 30 mins to an hour at the minimum. Using a mesh strainer, strain out any ginger pieces. Store in a sealed container in the refrigerator.
