As Halloween approaches, it's time to add a little spooky flair to your brunch menu. Inspired by the nostalgia of Halloweentown, Benny's Bellini is a hauntingly delightful cocktail that combines the sweetness of peaches with a hint of spice. Perfect for a Halloween-themed brunch!

Benny's Bellini
Homemade Peach Puree:
1-2 peaches (peeled, pitted, and sliced)
1 oz simple syrup
1/2 oz lemon juice
1 oz water (optional)
1 bar spoon peach or peach & apricot preserves
Bellini Cocktail:
2 oz Peach Puree
4 oz Prosecco
1/4 oz Jalapeno Simple Syrup
Peach slice for garnish
Dehydrated lemon wheel for garnish
Crafting the Cocktail:
Prepare the Peach Puree:
Combine the peaches, simple syrup, lemon juice, and preserves in a food processor.
Blend until smooth. No need to strain.
Set aside your puree.
Mix the Bellini:
In a coupe glass, add 2 oz of the peach puree.
Pour in 1/4 oz of jalapeno simple syrup.
Top off with 4 oz of Prosecco.
Stir gently to combine.
Garnish:
Add a peach slice and a dehydrated lemon wheel.
