As Halloween approaches, it's time to add a little spooky flair to your brunch menu. Inspired by the nostalgia of Halloweentown, Benny's Bellini is a hauntingly delightful cocktail that combines the sweetness of peaches with a hint of spice. Perfect for a Halloween-themed brunch!

Benny's Bellini

Homemade Peach Puree:

  • 1-2 peaches (peeled, pitted, and sliced)

  • 1 oz simple syrup

  • 1/2 oz lemon juice

  • 1 oz water (optional)

  • 1 bar spoon peach or peach & apricot preserves

Bellini Cocktail:

  • 2 oz Peach Puree

  • 4 oz Prosecco

  • 1/4 oz Jalapeno Simple Syrup

  • Peach slice for garnish

  • Dehydrated lemon wheel for garnish

Crafting the Cocktail:

  1. Prepare the Peach Puree:

    • Combine the peaches, simple syrup, lemon juice, and preserves in a food processor.

    • Blend until smooth. No need to strain.

    • Set aside your puree.

  2. Mix the Bellini:

    • In a coupe glass, add 2 oz of the peach puree.

    • Pour in 1/4 oz of jalapeno simple syrup.

    • Top off with 4 oz of Prosecco.

    • Stir gently to combine.

  3. Garnish:

    • Add a peach slice and a dehydrated lemon wheel.

    • For a Halloween twist, perch a mini skeleton on the rim.
