Ultimate Loaded Nachos with olives, pickled onions and ground meat

Food is love and loaded nachos is my love language šŸ˜‰


Here is a quick and easy recipe for the ultimate loaded nachos!


Ultimate Sheet Pan Loaded Nachos 🤤

Ingredients:

- 1lb Ground Turkey or Ground Beef (I used ground beef)

- 1 package taco seasoning

- Tortilla Chips (scoops work best)

- 1 6oz package of shredded cheese of your choice (I like to use a blend of cheddar, Colby and Monterey Jack)

- 2 Fresh tomatoes (diced) or fresh salsa (pico works the best)

- 1 Bunch of scallions chopped

- 1/2 cup of pickles jalapenos

- 1 jar of black beans

- 1/4 cup black olives

- Pickled onions (Homemade- recipe below)

- Sour Cream or plain green yogurt

- Guacamole (I just used store bought, it's easy!)

- Parchment Paper

- Baking Sheet (17x11)

Directions:

Preheat your oven to 400. Start by cooking your ground meat on a skillet or pan until fully cooked, add your taco seasoning (following the directions on the package). Line the baking sheet with parchment paper. Spread one layer of the tortilla chips out on the parchment paper first and sprinkle with cheese (don't be shy about sprinkling). Then layer your meat on top of the tortilla chips and then the black beans. Layer another batch of tortilla chips, repeat with the shredded cheese, the rest of the taco meat and the beans. Pop the pan into the oven and let cook for 5 mins/until the cheese is melted. Once out of the oven, get to those toppings. Add your diced tomatoes or fresh salsa, then your olives, pickled jalapenos, scallions and pickled onions. Finish off with a few dallops of sour cream and guacamole. Make sure dallops are evenly divided throughout the nachos! I like to have a side of salsa for some dipping as well! Time to get to crunching. Best enjoyed with a margarita or nice cold beer!


Pickled Onions Recipe:

- Mason Jar with lid

- 1 large red onion or 2 small red onions

- 1 cup white vinegar

- 1 cup apple cider vinegar

- 1/3 cup sugar

- 2 table spoons salt

- A pinch of crushed red pepper

Thinly slice the onion or onions. Add onions to the mason jar. On the stove, heat the vinegars, sugar and seasonings over simmer heat until the sugar is dissolved. Once the liquid has cooled, add the liquid/seasonings mixture to the mason jar. Close the mason jar and give it a good shake! Put your mason jar in the fridge. I usually leave it over night and in the morning they will be read. You can tel they are ready once they take on a pinkish color. They will keep in your fridge for about 2 weeks.
